I am trying to do crossplay between my PC and Xbox. It seems like you have to log into a unique Epic account on each device. Everytime I hit Connect on either device it logs me into the same one Epic account and it doesn’t seem like there is any way to change that. Must each machine be logged into its own Epic account for crossplay? If so, how do you switch accounts?

On PC, in the game, you just have to turn on the crossplay and that’s it.
Yes. On every platform except Epic, you need to create and sign in to an Epic account in order to play with other players outside your platform.
Example
Steam + Steam = No need for epic account
Xbox + Xbox = No need for epic account
PNS + PSN = No need for epic account
Steam + Xbox = Both need an Epic Games Account and be friends on EG to be able to crossplay in a party
Playstation + Xbox = same deal as before
You can always play with other players from all platforms on public matches, but you rely on randomly matching with them on a match rather than be part of a party
As for the epic account duplicate, that is correct. You can only log one Epic account to one instance of the game. If you own the game on Steam and Xbox, you’ll need to associate the game to two independent epic accounts in order to play with both at the same time.
How the hell do you accept epic game friend requests on ps5?
You can’t. You have to use Fortnite or Rocket League which have native Epic Games integration.
Otherwise you need to install EGS on a laptop or something and administer your friend’s list through it
