So I played the Beta and despite the jank I rather enjoyed the game and the graphics weren’t too bad.
My system is as follows:

Screen: Acer Predator X34P 34 Inch WQHD Curved 1900R ultrawide QHD (3440 x 1440)
Now on release yesterday while installing I paused to make more disk space, and then continued. Game ran like utter garbage and played badly too, really bad frames. Also randomly the Nvidia FPS monitor would not show in the corner.
Disgusted I put in a refund request last night.
Now today reading refunds are taking longer due to the pandemic (Epic has lower staff etc) I though i’d check Youtube to see if others are complaining. I don’t see that though, I see streamers actually having fun (as I was in beta). So I tinker a bit and still cant get the game running or looking as expected.
Last ditch effort then to wipe it and reinstall. Low and behold it keeps a steady-ish frame rate like before, and the graphics look like the selected options once again (a few on Cinematic, most on Epic). Also Nvidia frame rate counter shows again.
TLDR: Not sure if it’s the Epic store launcher, or the game its self, but ensure it downloads all at once! If your having problems try and reinstall, it may be the answer!
Really happy with the game now. :)
