Just had some Smoked BBQ brisket

@TheSenate I spent 18 CAD bucks on 4 palm size slices of smoked beef brisket.It left me kind of numb. Why? Because the beef was left rendered less juicy and no moisture or juice. All i had was an oily thicket that melted in my mouth.
I love beef brisket but when I have it from braised instead everything turns out nice and as expected (braising tyically includes a beef or chicken broth that its in with lots of herbs and spices).
Could it be that this restuarant was just smoking their briskets without any type of premarinade (like with mustard or vinegar or something) or dry rub(i don’t believe their menu said anything about dry rubs)?
They did however give me a cup of bbq smoke sauce. That didn’t help.

If this is how Texas Smoke houses are like, count me out.

Oh you poor soul.
That is a crime punishable by death in Texas. Not serving a juicy brisket is the greatest offense once can commit. I assure you, authentic Texas BBQ is so much better than that.
Barbecue is an art here, and I guarantee the more homemade a smoker looks, the better the brisket will be. A good brisket doesn’t need a sauce, it merely serves to supplement it.

I tell you what, I have applied my secret BBQ knowledge to the deer I got, and made a juicy, tender, fall apart venison brisket. Damn good food. And I was able to do that with the leanest animal that most people will ever eat. Them not making that simple brisket juicy and moist is an offense to barbecue as a whole.

But poor @MassImpact124… yes… there are places where they will serve you dried brisket, specially chain restaurants.

Also not all places in Texas serve good brisket. I’ve gone to a few places in Dallas/FortWorth and left with disappointment every time. Austin/SanAntonio/Houston is so much better.

Yeah, this is a franchise for sure. Didn’t even look like they had a smoker out front. Just premade stuff I bet, reheated to perfectoin.

Shame Snoga’s closed down. Fond memories of going there as a kid.

Had some Salt Lick shipped up to Kentucky for my family Christmas, brisket and smoked sausage from them was damn good.

Ultimately though the best brisket I ever had was out of a family friend’s homemade smoker at a backyard BBQ. At least until I made venison brisket.
Gotta say, Cincinnati has a few good places, owned by fellow Texans who moved of course.

Really? Waste of money, I do all of it by myself. I can even provide images. I even make better from Ramsteak, Rack’Lamb, Salmon and other version of fishes. Even Chicken. You guys are pathetic, Smoked meat is only eaten raw, baking it is worthless.

i don’t particularly like smoked meat. Actually it would probably give you gut cancer.
Same shit with Jerky or slim jims. I Don’t eat that like ever.
I would much prefer BBQ grill quickly with the meat or just until there is enough of the smell and taste.
but nnothing like the way the chicken i had was. It tasted good, meat was thick and the taste smokey but its the type of meat that has this lingering feeling in your stomach.
Like you know it absorbed all sorts of toxins all day long.

If it’s raw smoked, then it is OKAY, but as for BBQ it’s better to use raw meat to cook and bake it on the stove. You are incorrect that smoked meat would give cancer. It’s just the technique and preparations. For example. Smoked meat is amazing for Soup or other stuff. But if you wanna make BBQ I always do real raw meat that is not smoked, because smoked is just wasting the delicacy.
