So, my Omelette. This is the basic version, and you can tailor it to your own tastes adding any extra ingredients like onions, mushrooms, other chunks of meat etc that you like…but NO anchovies or tuna or prawns, that stuff is vile and is blasphemous to my pizza!

You’ll need;

  • 5 large slices of Chorizo (at least an inch in diameter, the pre-sliced packs are what I use)

  • 4 large eggs

  • 1 large handful of pineapple chunks

  • 1 large handful of grated cheese

  • A small handful of sliced jalapeños

Method

  1. Using a small amount of butter, gently brown off the chorizo in your frying pan until the chorizo is rigid. This is so that the butter and oils from the chorizo mix. This is the key to this great tasting Omelette, you’re going to use this to fry the omlette in. Remove the chorizo, and slice/dice into small pieces.

  2. Slice the pineapple chunks into smaller cubes, and do the same with the grated cheese and jalapeños. Mix these together to achieve an even distribution.

  3. Beat and whisk the eggs, together with a generous splash of full fat milk, in a bowl until super fluffy.

  4. Add approx 2/3 of the cheese/pineapple/jalapeno mic and whisk them together well, maintaining the fluffiness.

  5. Add some more butter to the frying pan, along with the butter+chorizo oil from earlier. Once the butter is properly melted, make sure the whole surface of the pan is covered, then add the mix from step 4.

  6. For the first few moments, you want to keep breaking up the omelette that is starting to solidify with a wooden fork and keep mixing it with the rest making sure even distribution of ingredients is kept. Then, allow it all to settle and slowly cook.

  7. When you are satisfied that the omelette is almost finished, sprinkle the remaining cheese/pineapple/jalapeno mic evenly across the omelette and evenly sprinkle the cooked chorizo on top as well.

  8. Place under a grill until the cheese starts to brown. Remove, season if necessary, plate it and devour it.

  9. Sit down, smile, and send good vibes my way 😊
