Dammit monsoon now I want to go cook an omelette. I make a really good omelette. Onion, mushrooms, olives, ham & bacon, peppers, & a 4 cheese blend. If I make a homemade tomato sauce for spaghetti I’ll use the leftover sauce as sauce for the omelette. Damn I’m hungry imagining it.

It’s actually really good if you sauté them with the onions and peppers, and add some garlic for taste. It really enhances the flavor profile if you use a red wine for the sauté.
